Mesclun Greens with Apples, Blue cheese, Walnuts and a Honey Dijon Dressing

Ingredients

For the salad:

  • 1 5oz bag mesclun greens
  • 1/4 red onion halved, quartered and thinly sliced
  • 1 honeycrisp apple quartered and thinly sliced
  • 1/2 cup walnut peices
  • 1/4 cup dried cherries

For the dressing:

  • 1/2 cup good olive oil
  • 1/4 cup honey
  • 1/4 cup dijon mustard

Instructions

  • Put all your salad ingredients in a bowl and give a little toss.

For dressing:

  • In a large measuring cup, combine the oil, honey and dijon. Whisk until all combined. 
  • Lightly dress the salad and give another toss.
