Lemon Dill Salmon

A quick, easy, delicious and impressive entree! With lots of bright lemon flavor, this salmon makes for the perfect weeknight dish that's light and filling.

Ingredients

For the salmon:

  • 1.5-2 lb filet of salmon can also use 4-6 individual filets
  • 8 tbsp unsalted butter (1 stick)
  • 1/2 tsp kosher salt
  • pepper
  • 1/2 tsp ground coriander
  • 3 whole lemons
  • 1 bunch of dill
  • 2 tbsp crumbled feta or goat cheese optional

For the sauce:

  • 3 tbsp fresh lemon juice
  • 2 tbsp olive oil
  • 1 tsp dijon mustard
  • 2 tsp sugar

Instructions

  • Preheat oven to 400°. Line a baking sheet with foil and spray with nonstick spray.
  • Place salmon filet on the baking sheet, skin side down. Sprinkle with salt, pepper and ground coriander. Slice 1 and half of the lemons into rounds, then cut in half to make half moon shapes. Place those around the outside of the salmon. Then place some dill down on top. Next, put slices of butter on top of the salmon, inside the lemon border. Top with more dill and lemon slices. Bake for about 25 minutes (until the thickest part of salmon flakes with a fork) then turn on the broiler for 3-4 minutes or until lightly charred.
  • While the salmon bakes, make the sauce. Combine all ingredients in a bowl and whisk to combine.
  • Serve salmon atop rice, orzo, roasted potatoes or rotini. Top with fresh dill, crumbled feta or goat cheese and a drizzle of the lemon sauce.
