Key Lime Pie Bars

Gluten Free Pretzel Crust
- 1 8oz bag of gluten free salted pretzels
- 3/4 cup unsalted butter melted
- 4 tbsp sugar
For the Filling
- 4 oz cream cheese softened to room temp
- 3 eggs yolks
- 3/4 cup key lime juice
- 1 tbsp key lime zest
- 1/2 tsp vanilla
For the crust:
Preheat oven to 350°. In a food processor, pulse your pretzels on high until very fine and crumbly. Let it go for 2 minutes. Next add in your melted butter and sugar. Pulse to combine.
Press the pretzel mixture into the bottom of a 9x11 pan coming up the sides a little bit to create a side crust. Bake for 12 minutes then take out and let cool.
For the filling:
Reduce oven to 325°. In the bowl of a stand mixer, add your softened cream cheese and mix on low for 1-2 minutes until super smooth and creamy. While the mixer is on low, add in your egg yolks one at a time. Mix for 2 minutes until fully combined. Then add in your lime juice and zest. Mix to combine. Pour over the pretzel crust and using a spatula, spread it to an even layer.
Bake for 35-40 minutes until edges are just starting to brown a tiny bit. Take out and cool at room temp for about 15 minutes. Then place in fridge to cool for 2 hours. Cut into bars and top with whipped cream and some zest if you like.
