Warm, chunky and hints of cinnamon. Just perfect.

- 10 apples, peeled and quartered, core removed I use 7 honeycrisp and 3 granny smith
- 2 cups water
- 10 tbsp sugar
- 1 tsp cinnamon
- 2 tbsp butter
After you've peeled, quartered and cut the cores out of the apples, put them in a big pot over medium heat. Pour your water over them and cover with a lid. Letting it simmer until apples are puffy.
Once apples are fork tender and puffy, drain all but about 1/2 cup of water. Return pot to stove top. Add your sugar, butter and cinnamon. Using a potato masher, mash the apples to your desired consistency. If you like super smooth apple sauce, use an immersion blender.
