Grinch Cookies
A cross between a rice crispy treat and a haystack cookie, these have a wonderful and surprising flavor of nutmeg and could not be easier! They're no-bake and I'm sure will be a yearly Christmas cookie in your house!
- 3 cups plain cornflakes, not sweetened
- 1/3 cup packed light brown sugar
- 1/4 cup light corn syrup
- 14 cup heavy cream
- 2 tbsp unsalted butter
- 1 tsp vanilla extract
- 1/2 tsp ground nutmeg
- pinch of salt
- 6-8 drops green food coloring
- sprinkles of choice
Put cereal in large mixing bowl. Line a large baking sheet with parchment paper.
Combine brown sugar, corn syrup, heavy cream and butter in a small saucepan. Bring to a simmer over medium high heat, then reduce heat to medium and whisk until smooth. Continue stirring occasionally until mixture is thickened and pulling away from sides of pot. About 5-6 minutes. Remove from heat and whisk in vanilla, nutmeg, salt and food coloring.
Pour over cereal and stir until all is coated. Then spoon little stacks onto the parchment paper. Let cool a little then use fingers to form little mounds. Then add sprinkles. As they cool they will harden a bit and hold shape. Store in an air-tight container up to 4 days. Enjoy!
