Fresh Summer Corn Salad

Crunchy and fresh side salad that's filled with veggies and has an amazing vinegar based dressing on top. Lots of fresh herbs keeps this bright and makes it the perfect addition to your Summer bbq's.

Ingredients

  • 4 ears of corn, kernels cut off of cob
  • 1 medium tomato, diced
  • 3/4 cup green onion, finely chopped
  • 1 Persian cucumber, quartered lengthwise and then thinly sliced
  • 1 large radish, finely diced
  • 1/2 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 1/2 cup crumbled feta
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 2 cloves garlic, pressed
  • salt and pepper to taste

Instructions

  • Put all of the chopped veggies and fresh herbs into a large bowl. In a separate small bowl, whisk together the olive oil, vinegar, pressed garlic, salt and pepper. Once combined, pour over the salad and stir to combine. Sprinkle the top with the crumbled feta. Can be made the day ahead if necessary and stored covered in the fridge. Enjoy!
