Easy White Bean Chili
A quick and delicious white bean chili that can be made with ground beef, ground turkey or ground chicken. Its full of flavor!

- 1 medium yellow onion, chopped
- 3 cloves garlic, minced, alternatively use 1 tbsp minced garlic from jar
- 1 1/2 lbs ground beef, I use 90/10
- 2 4 oz cans chopped green chiles
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/4 tsp cayenne pepper
- 3 15 oz cans cannellini beans, drained and rinsed
- 4 cups low sodium chicken broth
- 2 cups shredded Monterey Jack cheese, divided
- sour cream and fresh cilantro for serving
In a large pot over medium heat, brown the ground beef with the onion and garlic. Breaking up the meat as it cooks. Spoon out/strain the excess fat out of the pot and then add the chiles (don't drain), cumin, oregano, cinnamon, salt, white pepper and cayenne and cook for 5 minutes, stirring occasionally.
Stir in the beans and lightly mash about half of it with a potato masher. Add the broth and 1 1/2 cups shredded cheese. Return to a simmer over medium-low heat and cook until cheese is fully melted, about 10 minutes. Ladle into bowls and top with sour cream, remaining shredded cheese and fresh cilantro. Enjoy!
