Cucumber and Tomato Salad
Fresh and light! Filled with crisp cucumbers, juicy tomatoes, cannellini beans, thinly slice red onion and a sweet and tangy vinegar based dressing. The perfect side dish for your summer table!

- 2 English cucumbers, sliced into rounds
- 3 tomatoes, cut into chunks
- 1/2 red onion, very thinly sliced
- 1 can cannellini beans, drained and rinsed
- 2 tbsp olive oil
- 3 tbsp red wine vinegar
- 1 1/2 tbsp sugar
- salt and pepper
- 2 tbsp chopped herbs; basil, dill and parsley are my favorites
Put all the veggies in a bowl. In a small mixing bowl, combine the olive oil, vinegar, sugar, salt, pepper and chopped herbs. Whisk to combine. Pour over the salad and give it a toss. Let sit 20 minutes. Enjoy!
