Creamy Shrimp Scampi
A quick, weeknight dish that's lemony, buttery and just a little creamy. A classic pasta that's on your table in 15 minutes.

- 1 package linguine can use spaghetti
- 2 tbsp olive oil
- 6 tbsp salted butter, divided
- 1 1/2 lb shrimp; peeled, deveined, tails removed and rinsed.

- 1/4 cup dry white wine
- 2 tbsp lemon juice
- 5 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup parmesan, grated
- 1 tbsp fresh parsley, chopped
In a large pot, bring generously salted water to a boil for your pasta. Cook pasta till al dente.
While that's cooking, add your olive oil and 3 tbsp of the butter to a large pan. Wait until the butter melts then add your shrimp. Cook for 2-3 minutes and then flip them over. When you flip them, add in the white wine and lemon juice. Simmer for another 3 minutes.
Remove the shrimp. Add the minced garlic and remaining 3 tbsp of butter to the pan and cook until fragrant. About a minute. Then add in the cream and parmesan cheese. Give it a whisk and bring to a simmer. Let cook for another 3-4 minutes until thickened a bit.
Return the shrimp to the pan and stir. Then add in your pasta. Add in bits at a time to make sure you don't have too many noodles for the sauce.
