Creamy Sausage and Tortellini Soup
Filled with Italian sausage and four cheese tortellini, this soup checks all the boxes. Creamy, cozy and hearty!
- 1 pound mild Italian sausage
- 1 small yellow onion, diced
- 1 1/2 tsp minced garlic
- 3 tbsp flour
- 1 tsp dried basil
- 1/2 tsp dried oregano
- pinch of cayenne (optional)
- 1 tsp favorite hot sauce
- 1/2 tsp mustard powder
- 1/4 tsp pepper
- pinch crushed red pepper
- 1 cup heavy cream
- 5 1/2 cups chicken broth
- 3 cups kale, chopped about 2 big handfuls
- 3 cups four cheese tortellini
- salt to taste
In the bottom of a large soup pot, cook sausage and onion until browned and onions are translucent. About 8 minutes. Drain grease if there's a lot. Add garlic and cook until fragrant. About a minute.
Add flour and cook for a couple minutes, to cook off flour taste. Add basil, oregano, cayenne, mustard powder, pepper, red pepper flakes and hot sauce. Stir to combine.
Add chicken broth and give a good stir, scraping up any bits on the bottom. Slowly add heavy cream while stirring. Brin to a boil then reduce to a simmer. Add kale and tortellini and simmer for about 5 minutes. Taste and add salt to taste. Enjoy!
