Classic Scalloped Potatoes (Au Gratin Potatoes)

- 5 large russet potatoes peeled and cut into thin rounds, about 1/4 inch thick
- 1 medium white onion, diced
- salt and pepper
- 3 tbsp butter
- 3 tbsp flour
- 1/2 tsp salt
- 2 cups milk
- 1 1/2 cups shredded cheddar cheese
Preheat oven to 400°. Butter a medium sized casserole dish.
Place half of the potato slices in the bottom of the dish and top with the diced onion. Add remaining potatoes. Sprinkle the top with salt and pepper.
In a medium saucepan over medium heat, melt the butter. Once melted, add the 3 tbsp flour. Use a whisk and stir the whole time until it turns a light amber brown color. About 2 minutes. Then pour in the milk. Stir until thickened, about 4 minutes. Next add in the cheddar cheese and stir until completely melted. About a minute.
Pour the cheese sauce over the potatoes, sprinkle the top with a bit more salt and pepper. Cover with foil and bake for 1 hour and 30 minutes.
