Classic Peach Cobbler

Full of juicy peaches and brown sugar and topped with cinnamon sugar dusted biscuits. This classic style peach cobbler will be a Summer staple in your house!

Ingredients

  • 6-8 cups Sliced and peeled peaches Can use frozen as well, just let thaw completely
  • 1/4 scant cup white sugar scant means a light measurement, so not a full 1/4 cup
  • 1/4 scant cup light brown sugar not a full 1/4 cup
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp fresh lemon juice
  • 2 tsp cornstarch
  • 1/4 tsp salt
  • 1 cup flour
  • 1/4 scant cup white sugar
  • 1/4 scant cup light brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 tbsp cold unsalted butter, cubed
  • 1/4 cup boiling water

Instructions

  • Preheat oven to 425°. Butter a 2 qt baking dish (7x11 or similar size)
  • In a large bowl combine the peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch and salt. Pour into prepared dish and bake 10 minutes.
  • In a separate bowl combine the flour, baking powder, white sugar, brown sugar and salt. Then using your fingers or a pastry cutter, add the butter until a coarse crumb. Then add boiling water and stir with a spoon.
  • Take peaches out of oven and spoon the biscuit mixture on top. Sprinkle with cinnamon sugar and bake for 30 minutes or until bubbly and top is golden browned. Serve a la mode. Yum!
