Cajun Shrimp Skillet

Ingredients:
- 1 lb raw shrimp peeled and deviened (I used fresh, can use frozen if you have to)
- 2 tbsp blacked cajun seasoning divided
- 1/4 tsp crushed red pepper
- 2 tbsp oil I used grapeseed
- 1 tbsp unsalted butter
- 1/2 of a large yellow onion chopped (or 1 small onion)
- 1 small green pepper finely chopped
- 1/4 of a red pepper yellow pepper and orange pepper, chopped
- 1 can black eyed peas rinsed and drained
- 1 can diced tomatoes
- 1 tbsp garlic minced
- 1 tsp salt
Directions:
Remove the tails from the shrimp then place them in a gallon Ziplock bag. Pour 1/2 tablespoon of the cajun seasoning over the shrimp, close the bag and shake it around to evenly distribute seasoning. Place in fridge and let marinate for at least 1 hour.
In a medium skillet over medium heat, pour the oil and add the butter. Once hot, add in the onions and all the peppers. Cook until softened, about 5-6 minutes. Stirring occasionally.
Add in the shrimp and cook 3 minutes on each side or until they're no longer translucent. Once you flip them, add in the minced garlic and cook until fragrant.
Next, add the black eyed peas and diced tomatoes along with the remaining 1 1/2 tablespoons of cajun seasoning, crushed red pepper and salt. Stir to combine and reduce to a simmer. Cover with lid and let simmer for 5-7 minutes.
