Butternut Squash Mac

Ingredients

  • 4 1/2 cups cubed butternut squash
  • 1 shallot, diced
  • 2 small cloves garlic, minced
  • 1/2 cup water
  • 1 tbsp olive oil
  • 1/4 cup butter or ghee
  • 2-4 sage leaves
  • 5 tbsp parmesan cheese or nutritional yeast
  • 3/4 tsp kosher salt (use less if using regular table salt)
  • pepper to taste
  • 10 oz shell pasta

Instructions

  • In a large pot, bring water to a boil and cook your pasta. Set aside.
  • In a large skillet, add your butternut squash, shallots, garlic, oil and water. Cover with a lid and simmer until soft. Drain any excess liquid.
  • While that's softening, melt your butter in a small sauce pan. Once melted, add your sage leaves and cook until sage is fragrant. 3-4 minutes. Remove the sage leaves and set aside to use for garnish.
  • In a blender, add your drained squash, shallots and garlic. Then add in the melted butter, 5 tbsp parmesan, salt and pepper. Blend on high speed for about a minute until creamy and smooth. Pour over cooked and strained pasta. Stir and serve.
