Ingredients
4 1/2 cupscubed butternut squash
1shallot, diced
2small cloves garlic, minced
1/2cupwater
1tbspolive oil
1/4cupbutter or ghee
2-4sage leaves
5 tbspparmesan cheese or nutritional yeast
3/4tspkosher salt (use less if using regular table salt)
pepper to taste
10ozshell pasta
Instructions
In a large pot, bring water to a boil and cook your pasta. Set aside.
In a large skillet, add your butternut squash, shallots, garlic, oil and water. Cover with a lid and simmer until soft. Drain any excess liquid.
While that's softening, melt your butter in a small sauce pan. Once melted, add your sage leaves and cook until sage is fragrant. 3-4 minutes. Remove the sage leaves and set aside to use for garnish.
In a blender, add your drained squash, shallots and garlic. Then add in the melted butter, 5 tbsp parmesan, salt and pepper. Blend on high speed for about a minute until creamy and smooth. Pour over cooked and strained pasta. Stir and serve.
