Baked Brie with Cranberry Compote

Ooey gooey baked brie with a slightly sweet, slightly tart cranberry topping. So perfect to serve to guests!

Ingredients

  • 1 whole wheel of brie
  • 2 cups fresh cranberries about 12 oz
  • 1/2 tsp fresh chopped thyme
  • 1/4 cup apple juice
  • 1 tbsp honey
  • 1/2 cup sugar

Instructions

  • Preheat oven to 350 degrees. Place brie in a brie baking dish, or on a parchment lined baking sheet. Bake for 5-8 minutes. 
  • Meanwhile, put cranberries, thyme, apple juice, honey and sugar in a small saucepan. Turn on heat to medium and using a potato masher or muddler, mash the cranberries. Bring to a boil and keep stirring. Once a jam consistency is reached, remove from heat. 
  • Top brie with the cranberry compote and serve with crackers. 

Notes

The brie won't feel too warm on the top after the 5-8 minutes. That's okay! If the sides of the cheese wheel are warm, the inside is. If you leave it in too long the brie will be runny and melted.
