Bacon Wrapped Stuffed Dates

Big juicy dates, stuffed with blue cheese and a marcona almond, wrapped up in a piece of bacon and baked until melty inside and crisp outside. Such a great appetizer!

Ingredients

  • 20 large medjool dates
  • 10 pieces of bacon
  • 1/2 cup blue cheese crumbles, give or take depending size of dates
  • 20 marcona almonds

Instructions

  • Preheat oven to 375°. While oven is preheating prep the dates. Cut lengthwise (only halfway through) and remove pits. Stuff each date with a little spoonful of blue cheese crumbles and a marcona almond. Pinch the sides of date back together to hold stuffing in. Then open the bacon and cut the slices in half so you have two shorter pieces of bacon. 10 whole pieces of bacon is 20 half pieces. Wrap each date with a piece of bacon, it should wrap around about 1.5 times or close to it. Not more than that. Use a toothpick to hold in place and put on a rimmed baking sheet. Bake 10 minutes then flip each date on the side and bake for another 4-5 minutes. Flip to the last side and bake for another 4-5 minutes. Take out and enjoy! I let mine cool for a couple of minutes before serving.
