Apricot Walnut Cookies
Chewy, crunchy and subtly sweet. The perfect cookie!

- 2 cups powdered sugar sifted
- 1/2 cup flour can sub GF flour if you like
- 1/2 tsp baking powder
- 4 egg whites
- 2 1/4 cup chopped walnuts
- 3/4 cup apricots finely chopped or snipped
Preheat oven to 325 degrees.
In a large bowl using a whisk or spoon, combine the powdered sugar, flour, baking powder and egg whites. Be sure to do this by hand! Next add in your walnuts and apricots. Mix to combine.
Using a tsp or melon baller, drop small amounts onto a parchment lined baking sheet. Bake for 15-18 minutes until edges are just starting to brown. Remove from oven and let cool for a minute before taking off the sheet.
