15 Minute Chickpea and Lentil Curry
A delicious and quick chickpea and lentil curry that's meat free and packed with protein, fiber and iron. So yummy and comforting! Serve over some rice for a cozy meal!

- 1.5 tbsp olive oil
- 1/2 large yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger paste; or 1/2 tsp ground ginger
- 1 tbsp garam masala
- 1/2 tsp salt, to taste
- 1 tsp cumin
- 1 tsp turmeric
- 15 oz can of chickpeas, drained and rinsed
- 15 oz can lentils, drained and rinsed
- 15 oz can full fat coconut milk, shaken well
- 15 oz can diced tomatoes
- squeeze of lemon
- cilantro for serving
In a large skillet, saute olive oil and onion for about 3 minutes over medium heat until onion is soft. Then add garlic, ginger, garam masala, salt, cumin and turmeric. Stir and cook for 2 minutes. Add all remaining ingredients and simmer on low for 10 minutes. Garnish with cilantro and serve over rice. Enjoy!
