It’s been a minute. We moved!
I of course have heard that moving is no fun and trust me, I’ve done my fair share of moving. Nebraska to New York x 3 apartments, New York to Los Angeles x2 apartments and 2 homes. BUT. Moving with a kid and an entire house filled with stuff was no easy feat.
Anyways, let’s chat about this delicious tater tot breakfast casserole! The best part about it is… well actually, the whole damn thing. The combination of cheesy eggs, savory sausage and tater tot goodness is everything I want in a breakfast casserole! You are going to absolutely love it!
Tater Tot Breakfast Casserole
Tater Tot Breakfast Casserole
Filled with breakfast sausage, peppers, onions, eggs, cheese and of course, tater tots. So yummy and all done in one dish. Great for family get togethers, holiday's, celebratory mornings or just your average Sunday. Easy and delish!

Ingredients
- 1 lb ground breakfast sausage
- 1/2 green pepper, diced
- 1/2 red pepper, diced
- 1/2 yellow onion, diced
- 12 eggs
- 1/2 cup whole milk
- 1 tsp hot sauce
- salt and pepper
- 1/2 32 oz package frozen tater tots
- 8 oz shredded colby jack cheese
- fresh chives, chopped
Instructions
- Heat oven to 350°. Heat a large skillet over medium high heat and cook sausage, breaking it up. When browned, about 5 minutes, add the diced peppers and onion. Cook for about 8-10 minutes, until tender.
- In a large bowl, whisk eggs, milk, hot sauce, salt and pepper. Arrange tots in the bottom of a lightly greased 9x13 baking dish. Top with 1 cup of the cheese and then the sausage mixture. Pour the egg mixture over the top. Then sprinkle the remaining cheese on the top of that.
- Bake for 50 minutes, or unitl the center is set and not jiggly. Top with fresh chives and serve. Enjoy!
