Another #EasyMondays, another sheet pan. I can’t be stopped nor should I be. Aren’t we all grateful for easy recipes on one pan??
Here’s the thing with this one. It’s fish so it cooks quickly! Not only is it prepared on one sheet (line with parchment paper for extra simple cleanup) but it’s also done in under 30 minutes. Depends how thick your fish is! My cod pieces were pretty thick so took about 21 minutes for them to flake with a fork. But for thinner pieces, 15 minutes and you’re golden. The broiler at the end is what gets that beautiful light brown color on the top so don’t skip it!
This recipe works well with practically any flaky white fish so make the swap for what you have, haddock, halibut, tilapia etc. I’ve made this with halibut and it’s amazing!

Sheet Pan Garlic Parmesan Cod
Ingredients
- 2 filets of cod
- 6 tbsp butter
- 1/2 tsp garlic powder
- 1/2 cup parmesan, grated
- 1 1/2 tbsp fresh lemon juice
- salt and pepper
- 2 tbsp olive oil, divided
- 1 lb green beans, trimmed
- 1 cup cheery tomatoes, halved
Instructions
- Preheat oven to 400° and line a sheet pan with parchment paper.
- In a microwave safe bowl or small saucepan, add the butter, garlic, parmesan cheese, lemon juice, salt and pepper. Heat until butter is melted. Pat the fish dry with a paper towel and then drizzle both sides with 1 tbsp of olive oil. Spoon half of the parmesan mix over the fish and then flip and use remaining parmesan mix, Fully coating the filets on top and bottom. Place in center of baking sheet.
- In a medium bowl, toss the green beans and cherry tomatoes with remaining 1 tbsp olive oil, salt and pepper. Arrange on baking sheet around fish. Bake for 15-20 minutes, or until fish flakes with a fork. Then turn the broiler on for 3-4 minutes until fish has browned a little bit.
