Today I bring to you a super simple and really yummy side dish. Oven roasted cabbage, also known as roasted cabbage steaks.
Not going to lie, I used to think cabbage was boring and not an interesting vegetable. But I have set that opinion aside since living in LA because Erewhon has the most insane roasted cabbage. A little side order of it will cost you $12. *gasp* I know, it’s offensive. Especially considering a whole head of cabbage costs $1.50-$3.00, depending if you go organic. After my husband got side orders of that so many times, I decided it was time I tried to make some and see how it comes out.
I’m here to tell you, it is delicious. This oven roasted cabbage could not be easier and it looks pretty too. With just 6 simple ingredients you definitely have on hand, this will be a go-to recipe that you don’t even need to look at a recipe card for. It’s that simple. It also happens to be dairy free making this a fabulous vegan side option.
Notes for cabbage:
- You can swap this for red cabbage if that’s what you have.
- Remove the outer leaves of the head of cabbage. Then slice the head in half length-wise and then slice those into 1.5″ slices. Rinse each side to get out dirt. Then pay dry with a paper towel.
These measurements are approximate. My head of cabbage was large so I needed more of the oil mix. If yours is small, you might need less.

Ingredients
- 1/2 large head of cabbage, sliced into 1.5" thick slices
- 1/2 cup olive oil
- 1 tsp garlic powder
- 1/4-1/2 tsp crushed red pepper, depending on spice preference
- salt and pepper to taste
Instructions
- Preheat oven to 400° and line a baking sheet with parchment paper or a silpat. Spray with olive oil or other nonstick spray. Lay the slices of cabbage down on the sheet.
- In a small bowl mix the olive oil, garlic powder, crushed red pepper and salt and pepper. Brush the slices of cabbage with the olive oil mix, be generous. Bake for 3540 minutes until edges are browning and the center of cabbage is fork tender. Enjoy!
