Hello darlings!
I hope you’re ready for an easy, yummy salad recipe! It has been a couple weeks since I’ve posted my last #easymondays recipe and that’s due to all the travel we’ve done over the past month. It’s made it difficult to keep those recipes coming. But don’t worry, I’m stocking up on them so I won’t run out! This salad is perfect for those cooler months due to the rich flavor of the blue cheese, walnuts and the red onions.
The key here, is to slice the onions really thin that way you’re not eating a thick slice of red onion in each bite. So, use a good knife and take it slow. No rush!
Mesclun Greens with Apples, Blue cheese, Walnuts and a Honey Dijon Dressing
Ingredients
For the salad:
- 1 5oz bag mesclun greens
- 1/4 red onion halved, quartered and thinly sliced
- 1 honeycrisp apple quartered and thinly sliced
- 1/2 cup walnut peices
- 1/4 cup dried cherries
For the dressing:
- 1/2 cup good olive oil
- 1/4 cup honey
- 1/4 cup dijon mustard
Instructions
- Put all your salad ingredients in a bowl and give a little toss.
For dressing:
- In a large measuring cup, combine the oil, honey and dijon. Whisk until all combined.
- Lightly dress the salad and give another toss.
I served this at our holiday dinner party this year and everyone loved it! It’s slightly sweet from the apples and honey and tangy from the onions and dijon mustard. A really balanced salad in terms of flavor!
I hope everyone’s holiday prep is coming along well. I still have a few more presents to buy….I may or may not have done a little shopping for myself on black Friday and cyber Monday which means my shopping budget went quick. hehe But now I have to finish it up so I can send it out before we head to Paris in a week and a half. The rest of the day will be used to wrap gifts and shooting some last minute content for you guys! Only 10 days until Christmas!
