Is there anything better than a fresh, lemony piece of salmon? It’s one of those things that you can always rely on to be delicious and healthy. It’s full of healthy fats (if you’re breastfeeding or pumping, eating salmon once or twice a week will help to increase the fat in your milk. Mine went way up once I started doing this!) and could not be easier to make. (See below for how I arranged it)
A nice full filet of salmon also makes for a fabulous dinner party entree. It’s impressive looking and while it’s filling, it doesn’t make people feel gross afterwards. Ya know when you have a heavy dinner with friends and at the end of the meal, you all just kinda recline in your chairs and stare blankly at the table in front of you? Yeah. Been there. This dish won’t do that!
I like to serve this lemon dill salmon atop rice (seen here) or orzo! You could also serve it along side roasted potatoes or other types of pasta like a rotini. Leftover salmon makes for great lunch salads the following day.
Lemon Dill Salmon
Ingredients
For the salmon:
- 1.5-2 lb filet of salmon can also use 4-6 individual filets
- 8 tbsp unsalted butter (1 stick)
- 1/2 tsp kosher salt
- pepper
- 1/2 tsp ground coriander
- 3 whole lemons
- 1 bunch of dill
- 2 tbsp crumbled feta or goat cheese optional
For the sauce:
- 3 tbsp fresh lemon juice
- 2 tbsp olive oil
- 1 tsp dijon mustard
- 2 tsp sugar
Instructions
- Preheat oven to 400°. Line a baking sheet with foil and spray with nonstick spray.
- Place salmon filet on the baking sheet, skin side down. Sprinkle with salt, pepper and ground coriander. Slice 1 and half of the lemons into rounds, then cut in half to make half moon shapes. Place those around the outside of the salmon. Then place some dill down on top. Next, put slices of butter on top of the salmon, inside the lemon border. Top with more dill and lemon slices. Bake for about 25 minutes (until the thickest part of salmon flakes with a fork) then turn on the broiler for 3-4 minutes or until lightly charred.
- While the salmon bakes, make the sauce. Combine all ingredients in a bowl and whisk to combine.
- Serve salmon atop rice, orzo, roasted potatoes or rotini. Top with fresh dill, crumbled feta or goat cheese and a drizzle of the lemon sauce.
