This fresh summer corn salad recipe is the perfect addition to any bbq spread! It’s crunchy, juicy, super flavorful and just tastes like Summer in a bowl. Pretty cool, right?
I’ve had variations of this salad at different bbq’s and functions over the years. I knew that this year I wanted to perfect a corn salad recipe! The combination of the veggies, fresh herbs then the bite of the dressing really is just perfect. What’s in it you ask? Read on…
It’s filled with lots veggies like fresh/raw corn, tomatoes, green onion, cucumbers, radishes, fresh basil, fresh mint, crumbled feta and of course, it has the best vinegar based dressing to go on top. Most bbq tables are dominated by heavy and creamy based side salads. Which do not get me wrong, I can go to town on those. But how nice that this recipe fits right in and isn’t as heavy as a lot of the other side salads out there. Let’s get to it.

Fresh Summer Corn Salad
Ingredients
- 4 ears of corn, kernels cut off of cob
- 1 medium tomato, diced
- 3/4 cup green onion, finely chopped
- 1 Persian cucumber, quartered lengthwise and then thinly sliced
- 1 large radish, finely diced
- 1/2 cup fresh basil leaves
- 1/4 cup fresh mint leaves
- 1/2 cup crumbled feta
- 1/4 cup extra-virgin olive oil
- 1 tbsp red wine vinegar
- 2 cloves garlic, pressed
- salt and pepper to taste
Instructions
- Put all of the chopped veggies and fresh herbs into a large bowl. In a separate small bowl, whisk together the olive oil, vinegar, pressed garlic, salt and pepper. Once combined, pour over the salad and stir to combine. Sprinkle the top with the crumbled feta. Can be made the day ahead if necessary and stored covered in the fridge. Enjoy!
