Butternut Squash Mac

Most people think of heavy dishes around the holidays. Myself included in that! And as you probably know by now,  I have a true butternut squash addiction. Especially when paired with buttery sage. There are several different things you can do here to customize the dish to your taste preferences and allergies. Here is my recipe for butternut squash mac.

Butternut Squash Mac

Creamy, cheesy and oh so comforting. The perfect comfort-food side dish for your holiday table!

Ingredients

  • 4 1/2 cups cubed butternut squash
  • 1 shallot, diced
  • 2 small cloves garlic, minced
  • 1/2 cup water
  • 1 tbsp olive oil
  • 1/4 cup butter or ghee
  • 2-4 sage leaves
  • 5 tbsp parmesan cheese or nutritional yeast
  • 3/4 tsp kosher salt (use less if using regular table salt)
  • pepper to taste
  • 10 oz shell pasta

Instructions

  • In a large pot, bring water to a boil and cook your pasta. Set aside.
  • In a large skillet, add your butternut squash, shallots, garlic, oil and water. Cover with a lid and simmer until soft. Drain any excess liquid.
  • While that's softening, melt your butter in a small sauce pan. Once melted, add your sage leaves and cook until sage is fragrant. 3-4 minutes. Remove the sage leaves and set aside to use for garnish.
  • In a blender, add your drained squash, shallots and garlic. Then add in the melted butter, 5 tbsp parmesan, salt and pepper. Blend on high speed for about a minute until creamy and smooth. Pour over cooked and strained pasta. Stir and serve.

An easy recipe that is done in 15 minutes and will be satisfying to everyone! It makes a fabulous main or side dish. I would add some protein to this, like chicken, for a more complete meal.
