Thanksgiving is in two days. Holy. Crap. If you are stressed out about your meal prep, breathe. I have totally been guilty of forgetting appetizers until the last minute because I’m so focused on the main course and side dishes. This baked brie with cranberry compote is so easy and quick (literally done in 10 minutes!) and it looks so fancy for some reason. I don’t know if it’s the full wheel of cheese that gets people excited or the beautiful cranberry and thyme topping, regardless, it’s delicious and fool proof and everyone loves it. So, let’s get to it.
Baked Brie with Cranberry Compote
Ingredients
- 1 whole wheel of brie
- 2 cups fresh cranberries about 12 oz
- 1/2 tsp fresh chopped thyme
- 1/4 cup apple juice
- 1 tbsp honey
- 1/2 cup sugar
Instructions
- Preheat oven to 350 degrees. Place brie in a brie baking dish, or on a parchment lined baking sheet. Bake for 5-8 minutes.
- Meanwhile, put cranberries, thyme, apple juice, honey and sugar in a small saucepan. Turn on heat to medium and using a potato masher or muddler, mash the cranberries. Bring to a boil and keep stirring. Once a jam consistency is reached, remove from heat.
- Top brie with the cranberry compote and serve with crackers.
Notes
Such an easy appetizer that is sure to impress! Honestly, I wasn’t sure if the brie maker would be worth purchasing. But I will say that it makes it incredibly easy to serve. You just keep it in the dish! If you do it on parchment paper, it’s a little tricker to move since it’s warm and soft. Totally not necessary to the recipe, but it certainly helps. 🙂
