Ya know whenever you go to a party and think, “Man I hope they have good food/appetizers..?” I literally think that to myself with almost every party I go to unless I know the host will deliver. There are several things that always make me happy. One would have to be pigs in a blanket with some sort of yummy spicy mustard sauce, another would be sliders because duh and the last would be bacon wrapped stuffed dates.
There are so many variations for bacon wrapped stuffed dates but the most common I’ve seen is where the date is stuffed with goat cheese. Now, I love goat cheese don’t get me wrong. But I really think these bacon wrapped stuffed dates take the cake. First you start with big and soft dates. (Make sure they aren’t hard or you’ll be disappointed. Medjool dates are the best for this. I also recommend buying ones that still have pits as they tend to remain softer and juicier than ones that are already pitted.) Slice the date lengthwise, making sure not to cut it in half. Then stuff it with blue cheese crumbles and a Marcona almond for a little crunch (yum) then wrap it up in a piece of bacon, stab it with a toothpick and pop in the oven. This is a super simple appetizer that takes maybe 10 minutes to throw together and everyone will love them.

Bacon Wrapped Stuffed Dates
Ingredients
- 20 large medjool dates
- 10 pieces of bacon
- 1/2 cup blue cheese crumbles, give or take depending size of dates
- 20 marcona almonds
Instructions
- Preheat oven to 375°. While oven is preheating prep the dates. Cut lengthwise (only halfway through) and remove pits. Stuff each date with a little spoonful of blue cheese crumbles and a marcona almond. Pinch the sides of date back together to hold stuffing in. Then open the bacon and cut the slices in half so you have two shorter pieces of bacon. 10 whole pieces of bacon is 20 half pieces. Wrap each date with a piece of bacon, it should wrap around about 1.5 times or close to it. Not more than that. Use a toothpick to hold in place and put on a rimmed baking sheet. Bake 10 minutes then flip each date on the side and bake for another 4-5 minutes. Flip to the last side and bake for another 4-5 minutes. Take out and enjoy! I let mine cool for a couple of minutes before serving.
