Coming in hot after a few weeks off of recipe posts with this straight up crowd pleaser, classic peach cobbler.
Full of juicy peaches, brown sugar, cinnamon, nutmeg and a squeeze of fresh lemon juice. The cobbler biscuits are dusted with cinnamon sugar so they are crunchy on top and oh so deliciously soft on the bottom from the peach juices. Really quite delicious. You will love this one!
Classic Peach Cobbler
Full of juicy peaches and brown sugar and topped with cinnamon sugar dusted biscuits. This classic style peach cobbler will be a Summer staple in your house!
Ingredients
- 6-8 cups Sliced and peeled peaches Can use frozen as well, just let thaw completely
- 1/4 scant cup white sugar scant means a light measurement, so not a full 1/4 cup
- 1/4 scant cup light brown sugar not a full 1/4 cup
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tsp fresh lemon juice
- 2 tsp cornstarch
- 1/4 tsp salt
- 1 cup flour
- 1/4 scant cup white sugar
- 1/4 scant cup light brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 6 tbsp cold unsalted butter, cubed
- 1/4 cup boiling water
Instructions
- Preheat oven to 425°. Butter a 2 qt baking dish (7x11 or similar size)
- In a large bowl combine the peaches, white sugar, brown sugar, cinnamon, nutmeg, lemon juice, cornstarch and salt. Pour into prepared dish and bake 10 minutes.
- In a separate bowl combine the flour, baking powder, white sugar, brown sugar and salt. Then using your fingers or a pastry cutter, add the butter until a coarse crumb. Then add boiling water and stir with a spoon.
- Take peaches out of oven and spoon the biscuit mixture on top. Sprinkle with cinnamon sugar and bake for 30 minutes or until bubbly and top is golden browned. Serve a la mode. Yum!
