Last week I shared a teaser of a soup recipe that checked all the boxes for these cold Winter months. Creamy sausage and tortellini soup is it, friends.
It’s creamy. Check. It’s cozy. Check. It makes your nose run juuuuust a little bit. Check. It’s a big ole pot of coziness and I know you will love it. Filled with Italian sausage and four cheese tortellini, this soup is hearty and so so good.
Creamy Sausage and Tortellini Soup
Creamy Sausage and Tortellini Soup
Ingredients
- 1 pound mild Italian sausage
- 1 small yellow onion, diced
- 1 1/2 tsp minced garlic
- 3 tbsp flour
- 1 tsp dried basil
- 1/2 tsp dried oregano
- pinch of cayenne (optional)
- 1 tsp favorite hot sauce
- 1/2 tsp mustard powder
- 1/4 tsp pepper
- pinch crushed red pepper
- 1 cup heavy cream
- 5 1/2 cups chicken broth
- 3 cups kale, chopped about 2 big handfuls
- 3 cups four cheese tortellini
- salt to taste
Instructions
- In the bottom of a large soup pot, cook sausage and onion until browned and onions are translucent. About 8 minutes. Drain grease if there's a lot. Add garlic and cook until fragrant. About a minute.
- Add flour and cook for a couple minutes, to cook off flour taste. Add basil, oregano, cayenne, mustard powder, pepper, red pepper flakes and hot sauce. Stir to combine.
- Add chicken broth and give a good stir, scraping up any bits on the bottom. Slowly add heavy cream while stirring. Brin to a boil then reduce to a simmer. Add kale and tortellini and simmer for about 5 minutes. Taste and add salt to taste. Enjoy!
