Hello my loves,
I wanted to make another soup recipe and give a little twist to a traditional chili. This easy white bean chili has ground beef, lots of white beans, green chiles and a surprise ingredient, cinnamon. I know, it sounds odd. But it adds a really nice complexity of flavor to this easy white bean chili.
Chili is one of those things that just screams “cozy Sunday” to me. I don’t really know why? I mean it’s just as amazing any other day of the week! I think it probably stems from football Sunday’s which are now over, I know.
Side note: The Super Bowl halftime show… the best ever?! I was loving the entire thing and was dancing with Charlie the whole time. My mother in law was not as into it but I think got a kick out of seeing Charlie laughing as we were dancing.
Anyways, this is done in one large pot and is done in 30 minutes. An easy, quick and delicious meal for any day of the week!
Easy White Bean Chili
Easy White Bean Chili
Ingredients
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced, alternatively use 1 tbsp minced garlic from jar
- 1 1/2 lbs ground beef, I use 90/10
- 2 4 oz cans chopped green chiles
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/4 tsp cayenne pepper
- 3 15 oz cans cannellini beans, drained and rinsed
- 4 cups low sodium chicken broth
- 2 cups shredded Monterey Jack cheese, divided
- sour cream and fresh cilantro for serving
Instructions
- In a large pot over medium heat, brown the ground beef with the onion and garlic. Breaking up the meat as it cooks. Spoon out/strain the excess fat out of the pot and then add the chiles (don't drain), cumin, oregano, cinnamon, salt, white pepper and cayenne and cook for 5 minutes, stirring occasionally.
- Stir in the beans and lightly mash about half of it with a potato masher. Add the broth and 1 1/2 cups shredded cheese. Return to a simmer over medium-low heat and cook until cheese is fully melted, about 10 minutes. Ladle into bowls and top with sour cream, remaining shredded cheese and fresh cilantro. Enjoy!
