For my first easy Monday’s post of 2022 I wanted to share an easy and quick veggie side dish that everyone will love, even your kids! Charlie is obsessed with these maple roasted brussels sprouts and honestly I’ve never heard of a 1 year old loving brussels sprouts but they happen to be one of his favorite foods! I’ve tried cooking them in different ways for him and this is by far his favorite. The maple is no doubt the reason 😉
These maple roasted Brussels sprouts are really easy to make and I’m sure will become part of your weekly rotation of veggies.
Maple Roasted Brussels Sprouts
Maple Roasted Brussels Sprouts
The perfect roasted Brussels sprouts that are soft in the center with slightly crispy leaves on the outside, a slight sweetness from the maple syrup and a buttery burst with each bite. These are so good!
Ingredients
- 20 brussels sprouts
- 1/4 cup olive oil
- 1/4 cup pure maple syrup
- 6 tbsp butter
- salt and pepper to taste
- fresh shaved parmesan for garnish if desired
Instructions
- Preheat oven to 400° and line a baking sheet with foil or a nonstick silicone mat.
- Rinse the Brussels sprouts and pat dry. Cut the root end off of each sprout and then cut length wise. Pour onto baking sheet and drizzle the olive oil, maple syrup, salt and pepper over the top. Give them a good stir to fully coat with everything. Then turn each sprout cut side down on the pan, making sure there is sauce under each one. Scatter the 6 tbsp of butter over the top and roast in the oven for 20-25 minutes until the cut sides are starting to brown and the tops of the sprouts are browning. Remove from oven, top with a little parmesan if desired and serve. Enjoy!
