Ahh Spring… and almost summer. This year, it seems like all I want to do is be with friends, grill out, swim, go to the beach etc. I know I’m not alone in that.
After a year of a pandemic, we are ready for summer!!
I’m gonna be sharing lots of summer recipes that are light and fresh and quick to throw together! Starting with this cucumber and tomato salad. It’s exactly that, light and fresh. You guys, it’s so good. I have a slightly sweet yet tangy vinegar dressing that goes over it and lots of fresh herbs in there. I added some cannellini beans to this classic salad just to make it a little more hearty and add some protein. The perfect side dish for your summer table!
Feel free to jazz it up with crumbled feta or mozzarella pearls! I wanted to keep it just veggies but cheese would make a great addition.
Cucumber and Tomato Salad
Ingredients
- 2 English cucumbers, sliced into rounds
- 3 tomatoes, cut into chunks
- 1/2 red onion, very thinly sliced
- 1 can cannellini beans, drained and rinsed
- 2 tbsp olive oil
- 3 tbsp red wine vinegar
- 1 1/2 tbsp sugar
- salt and pepper
- 2 tbsp chopped herbs; basil, dill and parsley are my favorites
Instructions
- Put all the veggies in a bowl. In a small mixing bowl, combine the olive oil, vinegar, sugar, salt, pepper and chopped herbs. Whisk to combine. Pour over the salad and give it a toss. Let sit 20 minutes. Enjoy!
