Old Fashioned Meatballs

It’s been a minute since I’ve posted an #EasyMondays recipe but I really wanted to get back to it! Story time behind this week’s recipe…

The other night I was planning on making spaghetti and meatballs because I thought I had some meatballs frozen in the freezer. I go to grab said meatballs and… no mas. Fin! I had used all of them that I had prepped and frozen. This was a sad moment and also a very rushed one because we were in the middle of putting Charlie to bed. Rather than resorting to a random assortment of leftovers I decided to whip up some fresh ones. These were prepped and in the oven in just 15 minutes! They are so easy and so quick and this particular recipe can be used with pretty much any kind of sauce you could think of. Whether you want to add a red sauce, bbq sauce, brown gravy etc. It really does work with anything! The spices added are extremely versatile making these old fashioned meatballs great to have on hand! Not to mention they freeze incredibly well.  Can I get an amen?!

A few ideas:

  • Use Italian breadcrumbs if making for pastas
  • Smash a few together and make as a burger
  • Add some ground cloves and nutmeg to make them as Swedish meatballs

Old Fashioned Meatball Recipe

Old Fashioned Meatballs

This recipe gives you a versatile meatball that is juicy, flavorful and quick to put together! Works well with pretty much any sauce making them a freezer staple!

Cook Time1 hour hr

Cuisine: American, Italian

Servings: 18 meatballs

Ingredients

  • 1 1/2 lbs ground beef I use 85%/15%
  • 5 oz can of evaporated milk
  • 1 egg
  • 1/2 cup old fashioned oats
  • 1/2 cup cracker crumbs or breadcrumbs whatever you have on hand
  • 1/2 small white onion, diced
  • 1/2 tsp garlic powder
  • 1 tsp chili powder
  • salt and pepper

Instructions

If cooking immediately:

  • Preheat oven to 350°. Spray a baking dish with non-stick spray.
  • In a large bowl, combine all ingredients with your hands until just mixed. Form into meatballs. I use about 2 tbsp worth of meat per meatball but make them to your size liking. Place in prepared dish and top with your preferred sauce. Bake for 1 hour.

If freezing:

  • After rolling the meatballs, place them on a parchment lined baking sheet with space in between them. Put in the freezer for at least an hour to firm up and then place in freezer safe ziplock bag. When ready to use them, no need to defrost. Place them directly from frozen in a baking dish, cover with sauce and then bake at 350° for 1 hour.
