There are some things that just take me back to my childhood. Rice crispy treats being one of them! I remember my mom making all different colors and shapes for me to take to school for holidays. Red, heart shaped crispy treats for Valentine’s Day parties and orange, pumpkin-shaped crispy treats for Halloween. Of course green, Christmas tree-shaped crispy treats were a thing too. They are so versatile and easy to change with just a few drops of food coloring and a cookie cutter. The recipe I’m sharing today however, is a classic, chewy rice crispy treat with the addition of milk chocolate covered toffee chunks. *drooling* I take it a step further and brown the butter used in these to bring out a slight nutty flavor that really compliments the toffee. Let’s just say, these are delicious and you will love them.
There are so many ways people spell these…rice crispy treats, rice crispie treats, rice krispy treats, rice krispie treats….. However you choose to spell it, this recipe will leave you with soft, chewy, nutty flavored treats.

Toffee Rice Crispy Treats
Ingredients
- 12 tbsp unsalted butter 1 stick and half sticks
- 2 10oz bags of mini marshmallows
- 1 tsp vanilla extract
- 5 cups puffed rice cereal
- 5 heath bars, chopped into small pieces
Instructions
- Grease or line a 9x13 baking dish with parchment paper. Set aside.
- In a large pot, melt the butter or medium heat. Let it cook until it starts to brown, about 4 minutes. Reduce heat to medium-low and add in the marshmallows. Keep stirring the whole time until the marshmallows have melted and you have a smooth texture. Remove from heat. Stir in the vanilla extract. Then stir in the puffed rice cereal and heath pieces. Stir to combine and make sure to scrape up all the melted goodness at the bottom of the pot.
- Spoon the mixture into the prepared 9x13 dish and gently press with your fingers. You don't want to press down too hard or you will be left with hard rice crispy treats. So grease your fingers or the back of a spatula and gently press down. to fill the pan. Let sit at room temp for 1 hour to firm up a bit. Store in an airtight container.
These are chewy, gooey and all things good. The key is getting the ratio of marshmallow mixture to the cereal just right. Otherwise you’re left with hard and/or dry rice crispy treats. These are pretty dang perfect!
