When it comes to easy, weeknight recipes, I’m your girl. I sure do love labor intensive dishes but when I’ve had a long work day where the emails don’t stop coming, all I want is dinner and a glass of wine. And I want it pronto. That’s where this recipe comes in! It’s done in 15 minutes and is absolutely delicious.
I’m putting my own touch on shrimp scampi by adding cream, parmesan and spinach. Sneaking in veggies is kind of a new obsession of mine! If you want to watch a video on how I made this, click HERE.
Creamy Shrimp Scampi
Creamy Shrimp Scampi
A quick, weeknight dish that's lemony, buttery and just a little creamy. A classic pasta that's on your table in 15 minutes.

Ingredients
- 1 package linguine can use spaghetti
- 2 tbsp olive oil
- 6 tbsp salted butter, divided
- 1 1/2 lb shrimp; peeled, deveined, tails removed and rinsed.
- salt and pepper
- 1/4 cup dry white wine
- 2 tbsp lemon juice
- 5 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup parmesan, grated
- 1 tbsp fresh parsley, chopped
Instructions
- In a large pot, bring generously salted water to a boil for your pasta. Cook pasta till al dente.
- While that's cooking, add your olive oil and 3 tbsp of the butter to a large pan. Wait until the butter melts then add your shrimp. Cook for 2-3 minutes and then flip them over. When you flip them, add in the white wine and lemon juice. Simmer for another 3 minutes.
- Remove the shrimp. Add the minced garlic and remaining 3 tbsp of butter to the pan and cook until fragrant. About a minute. Then add in the cream and parmesan cheese. Give it a whisk and bring to a simmer. Let cook for another 3-4 minutes until thickened a bit.
- Return the shrimp to the pan and stir. Then add in your pasta. Add in bits at a time to make sure you don't have too many noodles for the sauce.
