Hello darlings,
It’s Wednesday. That mid-week slump has hit and coming up with dinner ideas is the last thing on your list of t0-do’s. That’s where I come in.
Introducing, my Korean ground beef bowl that is so easy and quick (done and on the table in 15 minutes) that it will become a part of your weekly rotation. It has in our house! It’s one of those recipes that I keep coming back to when I don’t have a lot of time or energy to cook anything else. If you really want to cut back cook time, buy those microwavable bags of rice from Trader Joe’s. I love those things. They really help in a pinch and they have organic brown, white and jasmine rice.
Korean Ground Beef Bowl
Korean Ground Beef Bowl
Ingredients
- 1 lb ground beef I like 85/15 fat
- 1/4 white onion, diced
- 1/4 cup + 1 tbsp soy or tamari sauce can use coconut aminos, but add salt to taste if you do
- 1/4 cup + 1 tbsp packed light brown sugar
- 1 1/2 tsp minced garlic
- 2 tsp sesame oil
- 1/4 tsp ground ginger
- 1 tsp orange juice
- 1/4 tsp crushed red pepper can add 1/2 tsp if you like spice
- 1/4 tsp pepper
- 2 cups cooked rice
- 1 cup steamed broccoli
- green onions, diced, for garnish optional
Instructions
- Place your ground beef and diced onion in a large pan over medium heat. Let cook until nicely browned, about 8 minutes. Drain off the fat.
- While the beef is cooking, mix the soy sauce, brown sugar, garlic, sesame oil, ginger, orange juice, red pepper and pepper in a small bowl. Pour into the pan over the ground beef and let simmer for 3-4 minutes until sauce has slightly thickened.
- Put some rice in the bottom of a shallow bowl. Top with broccoli and lastly, top with the ground beef. Make sure to spoon a little sauce over the bowl as well. Sprinkle with green onions and red pepper flakes.
I said 2 servings but you will have some leftovers! Which, trust me, you’ll be very happy you have! As always, be sure to tag me if you make it @HonestDarling.
