Key Lime Pie Bars

I know. It sounds like a little slice of heaven, right? These creamy key lime pie bars are not only sweet and tart but also manage to be gluten free! I get asked all the time for gluten free recipes so I decided to work on one for you. Gluten free baking can be tricky! At least, I have found it to be. I don’t want to use 4 different flours and binding agents for crusts and doughs. Some might call it laziness? I don’t know. But I think I’m in the majority that feels like the less amount of ingredients, the better. Cue a pretzel crust!

That’s right, these key lime pie bars are made with a gluten free pretzel crust that’s only 3 ingredients. It gives a nice saltiness, slight crunch and a lovely chewiness to the bars! Hubby is a big fan of anything lemon and lime and they have his stamp of approval!

Ingredients

Gluten Free Pretzel Crust

  • 1 8oz bag of gluten free salted pretzels
  • 3/4 cup unsalted butter melted
  • 4 tbsp sugar

For the Filling

  • 4 oz cream cheese softened to room temp
  • 3 eggs yolks
  • 3/4 cup key lime juice
  • 1 tbsp key lime zest
  • 1/2 tsp vanilla

Instructions

For the crust:

  • Preheat oven to 350°. In a food processor, pulse your pretzels on high until very fine and crumbly. Let it go for 2 minutes. Next add in your melted butter and sugar. Pulse to combine.
  • Press the pretzel mixture into the bottom of a 9x11 pan coming up the sides a little bit to create a side crust. Bake for 12 minutes then take out and let cool.

For the filling:

  • Reduce oven to 325°. In the bowl of a stand mixer, add your softened cream cheese and mix on low for 1-2 minutes until super smooth and creamy. While the mixer is on low, add in your egg yolks one at a time. Mix for 2 minutes until fully combined. Then add in your lime juice and zest. Mix to combine. Pour over the pretzel crust and using a spatula, spread it to an even layer.
  • Bake for 35-40 minutes until edges are just starting to brown a tiny bit. Take out and cool at room temp for about 15 minutes. Then place in fridge to cool for 2 hours. Cut into bars and top with whipped cream and some zest if you like.
