Apricot Walnut Cookies

I know it’s the new year and all… and people usually have diet-related goals/intentions… but don’t we all love cookies? They’re so good. To be honest, I never set diet goals for the new year because I’ve always lived in the “moderation” mindset. Everything is fine in moderation. If you’re one of those people with diet-related goals, crush it! Good for you for setting them. Luckily for you, these cookies are “lighter” than normal cookies and don’t feel as heavy. They’re full of protein and fiber thanks to the walnuts, apricots and egg whites. It can also be gluten free very easily by subbing in gf flour. The texture won’t be messed up due to the egg whites. This cookie is also known as an Unbeatable. Which, honestly, they are pretty unbeatable. But I changed the recipe a little from the one I got from my grandma to give it the ole “Tessa effect.” 😉 So, here’s my recipe for Apricot Walnut Cookies.

Apricot Walnut Cookies

Chewy, crunchy and subtly sweet. The perfect cookie!

Ingredients

  • 2 cups powdered sugar sifted
  • 1/2 cup flour can sub GF flour if you like
  • 1/2 tsp baking powder
  • 4 egg whites
  • 2 1/4 cup chopped walnuts
  • 3/4 cup apricots finely chopped or snipped

Instructions

  • Preheat oven to 325 degrees. 
  • In a large bowl using a whisk or spoon, combine the powdered sugar, flour, baking powder and egg whites. Be sure to do this by hand! Next add in your walnuts and apricots. Mix to combine. 
  • Using a tsp or melon baller, drop small amounts onto a parchment lined baking sheet. Bake for 15-18 minutes until edges are just starting to brown. Remove from oven and let cool for a minute before taking off the sheet.
