Cajun Shrimp skillet

Happy Wednesday!

The other night, I was wondering what to make for dinner. I knew I wanted to use the shrimp I had just gotten because, well, I always use seafood the first day I get it. At least, that’s my rule. I don’t mess around with seafood. haha I was half tempted to just make my white wine butter shrimp with rice and veggies (the white wine butter sauce is fab poured over rice) but decided to venture out. I have concocted the perfect blend of seasoning and heat. Even better? It only has 12 ingredients and is done in 30 minutes! According to my instagram polls, that should make you guys very happy!

Cajun Shrimp Skillet

Just the right amount of kick! Super flavorful 1 pan dinner that's done in 30 minutes

Ingredients

Ingredients:

  • 1 lb raw shrimp peeled and deviened (I used fresh, can use frozen if you have to)
  • 2 tbsp blacked cajun seasoning divided
  • 1/4 tsp crushed red pepper
  • 2 tbsp oil I used grapeseed
  • 1 tbsp unsalted butter
  • 1/2 of a large yellow onion chopped (or 1 small onion)
  • 1 small green pepper finely chopped
  • 1/4 of a red pepper yellow pepper and orange pepper, chopped
  • 1 can black eyed peas rinsed and drained
  • 1 can diced tomatoes
  • 1 tbsp garlic minced
  • 1 tsp salt

Instructions

Directions:

  • Remove the tails from the shrimp then place them in a gallon Ziplock bag. Pour 1/2 tablespoon of the cajun seasoning over the shrimp, close the bag and shake it around to evenly distribute seasoning. Place in fridge and let marinate for at least 1 hour.
  • In a medium skillet over medium heat, pour the oil and add the butter. Once hot, add in the onions and all the peppers. Cook until softened, about 5-6 minutes. Stirring occasionally.
  • Add in the shrimp and cook 3 minutes on each side or until they're no longer translucent. Once you flip them, add in the minced garlic and cook until fragrant.
  • Next, add the black eyed peas and diced tomatoes along with the remaining 1 1/2 tablespoons of cajun seasoning, crushed red pepper and salt. Stir to combine and reduce to a simmer. Cover with lid and let simmer for 5-7 minutes.

And there you have it. A super easy, weeknight dinner that packs a lot of flavor! I love the contrast of a sweet, honey cornbread on the side of this cajun shrimp skillet. It makes for the perfect companion and feels authentic to this southern dish. I hope you love it!
