Happy #easymondays! Today’s recipe is this 15 minute chickpea and lentil curry. It’s comforting, cozy and could not be easier for a weeknight meal. And? It’s toddler approved. Charlie ate 2 bowls of this when I gave it to him!
Let me set the scene for how this recipe came to be. It was 4:50pm. Charlie eats around 5:15. I look in the fridge to see the leftovers I was going to give to him had been eaten by hubby for lunch. I check our meat drawer. Empty. I didn’t want to make him a sandwich, I wanted more of a warm meal. So I started experimenting with this recipe that night and even the first time I made it, it was good. I adjusted a couple things the next time and boom, we have a winner.
It’s meat free but packed with protein, fiber and iron from the chickpeas and lentils. I think chicken would be the best addition to this curry if you’d like to add meat. Serve this chickpea and lentil curry over a bed of rice with a spoon so you can scoop up alllll the yumminess. And of course a piece of naan on the side. I like to top mine with some cilantro for a pretty and yummy garnish.

15 Minute Chickpea and Lentil Curry
Ingredients
- 1.5 tbsp olive oil
- 1/2 large yellow onion, diced
- 3 cloves garlic, minced
- 1 tbsp ginger paste; or 1/2 tsp ground ginger
- 1 tbsp garam masala
- 1/2 tsp salt, to taste
- 1 tsp cumin
- 1 tsp turmeric
- 15 oz can of chickpeas, drained and rinsed
- 15 oz can lentils, drained and rinsed
- 15 oz can full fat coconut milk, shaken well
- 15 oz can diced tomatoes
- squeeze of lemon
- cilantro for serving
Instructions
- In a large skillet, saute olive oil and onion for about 3 minutes over medium heat until onion is soft. Then add garlic, ginger, garam masala, salt, cumin and turmeric. Stir and cook for 2 minutes. Add all remaining ingredients and simmer on low for 10 minutes. Garnish with cilantro and serve over rice. Enjoy!
