Summer Salad with Shallot Vinaigrette

Bursting with fresh strawberries and cucumbers along with avocado, garbanzo beans, red onion and feta. Topped with a delicious shallot vinaigrette. Really yummy!

Ingredients

  • 2 cups arugula
  • 2 cups baby spinach
  • 8-10 large strawberries, sliced
  • 1 can garbanzo beans, rinsed and drained
  • 1/4 red onion, finely chopped and soaked in cold water
  • 1 large cucumber, diced
  • 1 avocado, diced
  • 1/2 cup crumbled feta cheese

Shallot Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 2 tsp maple syrup
  • 1 tsp sour cream or greek yogurt, generous
  • 1 tsp dijon mustard, generous
  • salt and pepper to taste
  • 1 small shallot, finely chopped

Instructions

  • In a large bowl, add all the salad ingredients. In a separate small bowl, add the vinaigrette ingredients and whisk to combine. Pour dressing over salad and toss well. Top with more feta in desired. Enjoy!

Notes

Note on the red onion: whenever eating red onion raw it helps to soak the chopped onion in really cold water for a few minutes to remove the bitterness. You're left with red onion that adds to the dish rather than is the star of the dish. Makes all the difference!
