Spinah Pesto Pasta
This light pasta dish will be a staple at your dinner table! Can be served as a warm main dish or as a cold side pasta salad!
Ingredients:
- 1 lb pasta
- 2 tbsp roasted almonds
- 1 small clove of garlic
- the zest of 1 small lemon plus a little squeeze of the juice
- 4 cups baby spinach approximately 4 handfuls
- 2 1/2 tbsp olive oil
- 3 tsbp of freshly grated parmesan cheese
- 3 fresh basil leaves
- salt and pepper to taste
Directions:
Cook pasta and reserve 1/2 cup cooking water. Drain and set aside.
In a food processor, pulse the almonds, garlic and lemon zest and juice until finely chopped. Add spinach, olive oil, parmesan, basil leaves, salt and pepper. Puree until smooth, scraping down sides.
Toss pasta with the pesto, adding some of the cooking water if it's a little dry. I added about 1/4 cup of liquid.
