Spinah Pesto Pasta

This light pasta dish will be a staple at your dinner table! Can be served as a warm main dish or as a cold side pasta salad! 

Ingredients

Ingredients:

  • 1 lb pasta
  • 2 tbsp roasted almonds
  • 1 small clove of garlic
  • the zest of 1 small lemon plus a little squeeze of the juice
  • 4 cups baby spinach approximately 4 handfuls
  • 2 1/2 tbsp olive oil
  • 3 tsbp of freshly grated parmesan cheese
  • 3 fresh basil leaves
  • salt and pepper to taste

Instructions

Directions:

  • Cook pasta and reserve 1/2 cup cooking water. Drain and set aside.
  • In a food processor, pulse the almonds, garlic and lemon zest and juice until finely chopped. Add spinach, olive oil, parmesan, basil leaves, salt and pepper. Puree until smooth, scraping down sides.
  • Toss pasta with the pesto, adding some of the cooking water if it's a little dry. I added about 1/4 cup of liquid.
