Summer is here! I wanted to share a healthy and yummy salad recipe and this Summer salad with shallot vinaigrette is just that! Filled with lots of fresh fruits and veggies and has the best vinaigrette on top. Add chicken or steak to this for some added protein if you’d like! Really easy and delicious!
What are your Summer plans? We don’t have too much going on besides a trip to Montreal in August. Excited to go back since more things are open! I also plan on having a few dinner parties this Summer and I can’t wait.
This salad would be perfect for any get together you’re having or makes a great bring-a-long!
Summer Salad with Shallot Vinaigrette
Summer Salad with Shallot Vinaigrette
Ingredients
- 2 cups arugula
- 2 cups baby spinach
- 8-10 large strawberries, sliced
- 1 can garbanzo beans, rinsed and drained
- 1/4 red onion, finely chopped and soaked in cold water
- 1 large cucumber, diced
- 1 avocado, diced
- 1/2 cup crumbled feta cheese
Shallot Vinaigrette
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 2 tsp maple syrup
- 1 tsp sour cream or greek yogurt, generous
- 1 tsp dijon mustard, generous
- salt and pepper to taste
- 1 small shallot, finely chopped
Instructions
- In a large bowl, add all the salad ingredients. In a separate small bowl, add the vinaigrette ingredients and whisk to combine. Pour dressing over salad and toss well. Top with more feta in desired. Enjoy!
