Okay, it’s super bowl time. I don’t know about you darlings, but I’ve always loved the super bowl. There’s something about big sporting events that excite me! Mainly because of the food, not gonna like. But also, all the people coming together to cheer on a group of individuals that are pushing their bodies so hard to get a win. It’s very fun to watch! Back to the food…
Growing up, my mom always cooked a ton of yummy foods for game days. It was always delicious, usually fattening and 90% of the time it involved cheese. This recipe is no different. Not overly fattening, but it does involve cheese….Philadelphia cream cheese….as in the city that one of the competing teams is from. Okay, you guessed it. I’m rooting for the Eagles.
Stuffed Cheesecake Bites
Ingredients for bites:
- 3 tubes of crescent roll dough
- 1 package of Philadelphia cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 1/4 tsp cinnamon
- 1/4 cup melted butter
Ingredients for the icing:
- 1/2 a package of cream cheese
- 1/2 lemon, squeezed
- 1 tsp vanilla
- 1/4 cup powdered sugar
- 2 tablespoons milk (or more if you want it runnier)
Directions:
- Pre-heat oven to 450 degrees.
- Mix the cream cheese, powdered sugar, vanilla and cinnamon together for the bites until smooth.
- Unwrap the crescent dough packages. I use powdered sugar for the counter tops so it won’t stick.
- Put 1 spoonful of filling mix in each little triangle of crescent dough. Pinch all the edges together. It will look like a little wonton.
- Arrange on a parchment lined baking sheet to look like a football. This takes a couple minutes to sort of smooth out the “roundness” of the edges. But it’ll get there! Totally doesn’t have to be perfect. Everyone will be impressed that you even remotely resembled a football.
- Brush the top of the football with melted butter and sprinkle with more cinnamon, if desired. The butter helps it brown up and it resembles a football a little more. Also, who says no to more butter?
- Bake 15-17 minutes until browned.
- While those are baking, combine all the icing ingredients together until smooth. You can either use this as a dipping sauce or drizzle over the football. Whatever you like!
