Happy Monday! This week for #EasyMondays I am sharing a really yummy recipe that has only 8 ingredients. Yes, only 8 ingredients. Doesn’t get much easier than this for a weeknight dinner!
Kale and White Bean Orecchiette with Ground Pork and Parmesan
An easy, weeknight dinner idea. Only 30 minutes. A good way to sneak in some veggies too!

Ingredients
Ingredients:
- 1 package of spicy or mild pork sausage
- 1/2 yellow onion diced
- 1/2 tsp garlic minced
- 1 bunch kale massaged and rinsed, stems removed and roughly chopped
- 1 can white beans drained and rinsed
- 1 package orecchiette pasta cooked (reserve 1/2 cup cooking liquid)
- 1 1/2 cups freshly grated parmesan
- squeeze of a lemon
Instructions
Directions:
- In a large pot, boil water with 1 teaspoon salt and cook pasta to your preferred level. Mine is slightly more than al dente. Drain pasta and reserve 1/2 cup of the cooking liquid.
- In another large pot, brown your ground pork and onions. Once fully cooked, remove the meat and onions and set aside. Using a wooden spatula, scrape all the browned bits from the bottom of the pan.
- Next, add your chopped kale to the same pot used for the meat. Stir occasionally until it's reduced in size. Add in the white beans and garlic. Cook another minute until fragrant.
- Add the pork back to the pot. Stir to combine. Add in the pasta and the cooking liquid and stir. Lastly add in the parmesan and squeeze of a lemon and stir.
