Posting these homemade baked cowboy beans for #easymondays a day early so that you can make them for Memorial Day! They beat the can of baked beans any day and they could not be more simple to make.
Filled with kidney beans, cannellini beans, pinto beans and some store bought baked beans. I know, why not just open a can of those? Trust me, you cannot beat the flavor of homemade baked beans. The store bought ones just add a little extra flavor and sauce. You can skip if you’d like but they do add a nice smokiness. Besides beans there are lots of bacon, onions and green peppers. Really so good. These are a little sweet, a little tangy and just so darn good. Great for any bbq or crowd!

Homemade Baked Beans
Ingredients
- 2 cans cannellini beans, drained and rinsed
- 2 cans pinto beans, drained and rinsed
- 1 can dark red kidney beans, drained and rinsed
- 36 oz canned baked beans
- 1 lb bacon, cut into pieces
- 1 small yellow onion, diced
- 1 large green pepper, chopped
- 1/4 cup light brown sugar, packed
- 1 cup ketchup
- 2 tbsp yellow mustard
- 1/4 cup apple cider vinegar
- 2 cloves garlic, minced
Instructions
- Preheat oven to 350°. In a large heavy bottomed dutch oven, cook bacon. I like to cut the bacon into pieces using kitchen scissors. Makes it easy. Once cooked, remove the bacon using a slotted spoon and set aside. Leave the grease! Add onions and peppers and cook until softened, about 4 minutes. Then add minced garlic and cook another minute until fragrant. Add all of the beans and cooked bacon, stir to combine. Next add brown sugar, ketchup, mustard and apple cider vinegar. Stir to combine and put lid on top. Place in preheated oven for and hour and half. Enjoy!
