Cinco de Mayo is in t-3 days and I actually can’t wait. And not gonna lie, the excitement really is because of the tacos and margaritas that will be consumed. And let’s be honest, I don’t need a holiday to take part in taco and margarita consumption. haha But, I’m still excited.
This year, we’re actually attending a birthday party on Cinco de Mayo! However it is not a taco themed party….it’s a prime rib themed party! Which, I’m also not complaining about. Listen, if there is food and alcohol it’s gonna be a good time and I’ll be happy as a clam. I’m easy, that way!
But! If you are partaking in festivities I highly recommend making these frozen mango margaritas! You can easily double, triple or quadruple this recipe to serve 4-8 people.Or heck, just for yourself. 😉 haha Just kidding. But these are addicting and you will love them. You can also freeze these if you don’t consume all of it right away. Then just toss is back in the blender when you want to drink it.
Frozen Mango Margaritas
Ingredients
- 16 oz frozen mango chunks 1 bag
- 4 oz tequila
- 3 limes, juiced
- 2 tbsp agave
- 1/2 cup coarse kosher salt
- 1 tsp chili powder
- 1 lime, sliced into wedges for garnishing optional
- dried mango pieces for garnishing optional
Instructions
- Put all ingredients in a blender (besides lime wedges dried mango pieces) and turn to smoothie setting. While that's going, rub a lime wedge along the rim of the glass. In a small bowl, mix the salt and chili powder. Dip the glass in the salt mixture and twist to coat. Pour margarita into glasses and garnish. Cheers! xx
