We have all had dry chicken breasts in our life. They are no bueno. They usually require a lot of sauce to make up for the dryness and a big drink of water after each bite to help wash it down. To be honest, I prefer chicken thighs for pretty much everything. I love a crispy skin. But I feel like chicken breasts have a bad rep. I’m here to give you a foolproof recipe for an insanely moist and flavorful chicken breast recipe that is so easy it is sure to become a staple meal in your home.
I love having this easy honey dijon chicken with mashed potatoes and a veggie. Green beans, broccoli, asparagus are all good options but you really can’t go wrong. Mashed cauliflower is also a great substitute if you want to lighten up the regular mashed potatoes. Pro tip: try combining the two! It gives that starchiness that we all love but is lighter and sneaks in more veggies.

Easy Honey Dijon Chicken
Ingredients
- 4 tbsp olive oil
- 3 tbsp honey
- 2 tbsp whole grain mustard
- 1 tbsp dijon mustard
- 4 cloves garlic,minced
- 1/2 tbsp lemon juice
- 4 large chicken breasts
- salt and pepper
- 1/2 tsp paprika
- fresh rosemary sprigs
Instructions
- Preheat oven to 400° and spray a baking pan with non stick spray.
- In a small bowl, combine the oil, honey, mustards, garlic and lemon juice.
- Place chicken into baking dish and sprinkle with salt pepper and paprika on both sides. Spoon 3/4 of the honey mustard mixture over the chicken and spread it out. Place a few rosemary sprigs in between the chicken breasts and cover tightly with foil. Bake for 15 minutes then remove from oven and spread the remaining honey mustard sauce over the top. Place back in oven and bake uncovered for another 10 minutes, until internal temperature is 165°. Remove from oven and let rest a few minutes before serving. Serve with mashed potatoes and spoon remaining pan drippings over the chicken. Enjoy!
