It’s soup season *cue cozy vibes.* When it first starts getting chilly all I can think about is Thanksgiving and then Christmas. Once Christmas is over, all I can think about is keeping the chill away until temps go back up.
I know what you’re thinking, “You live in Los Angeles. What chill?”
Well, believe it or not, it does get chilly in LA. In fact, it usually doesn’t get chilly until after Christmas. So now is when we have the coolest temps that 100% warrant wearing a coat. I guess in my mind any weather that requires a knit or coat is soup season? Yeah, that sounds right. Which brings me to today’s recipe. Crockpot ham and bean soup. This soup is done in the crockpot my friends for real ease and hands-off cooking. It’s packed with protein and veggies and hits just about every nostalgic note in my repertoire. Crockpot recipes are one of my favorite ways to cook as they are so simple and make the house smell amazing. Crockpot Ham and Bean Soup
Hearty Crockpot Ham and Bean Soup
Ingredients
- 1 ham bone with meat, can use a ham hock as well
- 2 cups diced ham
- 3 carrots, peeled and chopped
- 3 stalks celery, rinsed and chopped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 3 cans cannellini beans, drained and rinsed
- 1 tsp dried Italian seasoning
- 1 tsp ground cumin
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp dried rosemary
- 4 cups reduced sodium chicken broth
- 2 cups water
Instructions
- Put all ingredients in a crockpot, cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours. Remove bone and serve with crusty bread and salted butter. Enjoy!
