Crockpot Chicken Tacos

I’m gonna go ahead and assume that everyone loves tacos. Because if you don’t, well, you’re weird. Tacos are the beeeest. I love the flavor, the spiciness and the fact that you eat them with your hands. Good tacos temporarily transport me south of the border. They’ve got a lot going for them.

I don’t know about you guys, but for the longest time I just browned lean beef or turkey, added a packet of low sodium taco seasoning and called it tacos. Which, don’t get me wrong, that is delicious. But, I thought I’d share another taco recipe that is easy (made in a crockpot) and that’s bursting with juicy flavor. These guys have a kick. 😉 If you don’t do spice, just omit the cayenne. Easy peasy!

Crockpot Chicken Tacos

Ingredients

Ingredients

  • 2 pounds boneless skinless chicken breasts (Approximately 6 average size breasts)
  • 6 garlic cloves minced
  • 1 small white onion diced
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp ground chipotle
  • 1 tsp cayenne
  • 2 tsp salt
  • 1 tsp pepper
  • 1/3 cup olive oil
  • 1 lime, juiced
  • 4 cups chicken broth
  • 1 large handful of fresh cilantro roughly chopped

Instructions

Directions:

  • Cut chicken breasts in half, width wise, and place in crockpot. Mix all the spices together and toss with chicken. Top with the diced onion and minced garlic. Pour in the olive oil. Stir to combine. Pour the chicken broth and lime juice over the spiced chicken. Cover and cook on low for 5 hours or on high for 3 and a half. Remove lid and shred the chicken with two forks. It really should just fall apart. I took my fork and stabbed a piece of the chicken to shred and it shredded itself. It is so tender. Add 3/4 of the cilantro. Assemble tacos.

You guys, these are so good. So juicy and soooo flavorful.

*tip* If you don’t have 3-5 hours to make this and need it done quicker, nix the crockpot! Take the chicken, cut each breast into 3 parts. Pour the olive oil over it. Add all the spices, onions and garlic. Mix well. Spread on a foil lined baking sheet and bake at 350 degrees for about 25 minutes. Once chicken is done, shred the chicken, add about 2 1/2 cups chicken broth. (will be slightly less than with the crockpot because it won’t be steaming at all!) Botta bing, botta boom. Dinner in 30 minutes.
